Been watching a TV series with my LTR. We got halfway into an episode last night and planned on her finishing it tonight. She goes out with her friends today and says she'll just finish it another day with me. How to handle this?

Do something instead that is a self-investment. Work on a hobby, go work out or hang out with your friends. You don't want to seem that you're relying on her to have a good time. Show her that you're not perturbed by her dropping your plans.

Do something that shows you have other things to finish. If you do nothing and mope around then she will feel like she controls your activities.

Really depends, when you say "planned on her finishing it tonight" does that mean you guys had an agreement that you were going to watch it tonight? If so then yeah you can't reward that bad behavior and I think you made the right move by continuing with the plan anyway when she decided to go out with girlfriends instead.

If the plan was not clearly agreed on then that's a covert contract which you really want to avoid. If you had to stop halfway into an episode and you assumed she would finish it the next day that was your mistake rather than hers, you would've needed to clarify your expectations right then for the next day. If that expectation wasn't set then I'd be on board with KumonRoguing's recommendation of just going to the gym or out with the boys.
