As a general rule, bartenders and waitresses are probably best avoided, unless you work with them too. Shitty schedules, and they're inevitably going to be banging a coworker, either in the past, presently or in the future. Just my experience.

That said, the simplest thing to do is hang out with her on a night she isn't working til 2 am..

Most 'industry' people have Sunday/Monday off. Bite the bullet for a night of drinking on of those and invite her out on one of those would be the 'easiest' way.

I'd be wary of her flirting, it's how bartenders develop regulars and get paid. She's been pretty forthright about having a BF - it may not matter, or it could be announced to weed out the chumps. If she flakes on a non-work night, I think you should bark up a different tree.
