First, I traveled to India and pulled out some Indian Onion Salad that had been marinating in my fridge overnight (on the right). Then I traveled to east Texas/western Louisiana for my Cajun chorizo skillet burger (on the left).

That Indian Onion Salad recipe is here. It's quite delicious. Like the author suggests, I chop up the remaining onions into tiny bits, stir it into sour cream, and use it for dip for future nachos or maybe dip for naan bread.

With the Cajun chorizo skillet burger: it's basically like a version of Beef Tex Mex Cassarole like the recipe here. Except I use Cajun seasoning instead of taco seasoning and Louisiana hot sauce instead of enchilada sauce. A former co-worker from right on the border of east Texas/western Louisiana had family on both sides of the border and said this was a family recipe. So I had to try it.
