Don't go for shitty chains. Tips are calculated as a percentage of the bill. Try get a job at a restaurant that is busy and expensive.

Restaurant manager here.

Chances are that you’re not going to be hired as a bartender or a server at that expensive, elite and small place in your town with no experience. You can and certainly should try but don’t expect to walk off the street and get one of these positions. People in the service industry usually move up to those once they get experience if they don’t move into management.

You have two real options. 1. Barback. The pay isn’t amazing and you work harder than anyone else in the building if you’re doing a good job. But it gets you in and shows the work ethic you have. Do this if you’re comfortable working until late at night. When you interview, ask them the process of promoting to bartender. A lot of places dangle that carrot, make sure you know exactly the process and follow up on it. No ones going to remember they said anything about it and act on it if you don’t.

Serve at some high volume location. Most chains and just bigger restaurants in general hire servers off the street. The tips can be hit or miss. This is better if you want to get out before 2 AM or are looking to make more right away. Also ask how they promote to bartender. And more importantly, ask what they plan on a server doing in sales in a night. Asking how much money the servers make gets an anecdotal response at best, but asking how many servers are staffed based on projected sales gets you a concrete answer on a rough estimate of what you can expect to make.

With either one, work hard and keep your head down. Befriend the managers when you show you work hard. Don’t immediately fall into the trap of working the minimum that other people do. This will make your future there (better sections, more hours, bartending) totally reliant on how well you play the politics.

Just...don't do it. Most service jobs will be better. Why not get a sedentary service job and start a business in your spare time? If you want to work in a restaurant, find somewhere to learn bartending. Waitering is soul destroying.
