well the difference is that near boiling coffee isn't required for coffee, if you want to hunt deer or cut down a tree you need the right tool to do that activity, but serving coffee that hot adds nothing to the coffee, if you served coffee the temperature it is now the coffee is just as good, and you don't have to risk having your genitals fused to you leg
