They give guidelines for moderation. One example was that one 60 year old man drank 3 litres of soy for months. Do you really think the average person ingests that much soy, and so regularly? Most people don't even drink that much water a day, let alone eat that quantity of anything. So, even if soy is a part of that much of our diet (and I'd like to see you substantiate it with well cited examples), it's highly unlikely it's three litres of it.
