R/tinder can be good for this too. When I tinder I open with a witty/stupid comment or something I notice in their profile, see where the conversation flows from there. Sometimes I get a number quick, sometimes I'll talk to a girl for days. Once you get the number though, make plans.

Somewhere with food is still probably a good idea. The bar is just crowded. Is there an ice cream or pizza place by the bar instead? It sounds like you have an awesome thing going. Focus on enjoying yourself and text when you want. The other guys here have some good guidelines for what qualifies as "needy". I struggle with this too, since I'm in the dating mentality of "one good turn deserves another", so when I sincerely enjoy somebody I get stuck somewhere around where you're at. Some girls are harder than others. If the profile is all blank then you can always comment on something in a picture, do a compliment, or steal a line from r/tinder. I heard that plenty of fish is awful, but if my tinder experience is relevant in anyway, I just like asking girls out now, you don't really need to wait. Right now, you have a high value, and the more time you invest could be time that she's fading out of your text game isn't there or she has more options. I had a very similar situation happen the other day with a girl I still may potentially hook up with.
