Quit driving with her in the car. Period. Let her know in no uncertain terms that she is creating an unsafe situation by distraction and it's safer for both of you if she isn't there.

That's a beta quality. The fact that she knows you're watching should be enough. Babysitting your woman is a bitch move. Give her the rope to hang herself and when she realizes the distance you've given her she will act on that in what is likely a predictable manner. Get ahead of the curve, you should never be surprised by how this plays out.
