Depending on the weight used I'd advise a little body english at around 200+ pounds. Under 200 pounds I'd keep form strict and focus on deadlifts which will carry over nicely to keeping a tight back.

a little of both is good. The best is honestly heavy compounds lighter isolation exercises. Ex. 3x5 heavy barbell overhead press while doing 3x12 side lateral raises with a comfortable weight.

Yes as long as calories are met, protein is kept around 100+ grams and you get some fiber you'll be fine.
