The difference is that “men” are generally in a position of greater power and privilege based on being male, whereas “Mexicans”, “Jews”, and “Chinese people” are generally in a position of less power and privilege (compared to the ‘default’ white, non-Jew). Women talking about men collectively are punching up, the other examples are punching down.
