You don't have to write everything down: just get a dictation app on your phone, and either root your phone and add gesture to one of your hardware buttons, or just buy a bluetooth button so that you can trigger recording whenever you feel a shitstorm is coming up. And in case you ever need to use the recording in court, depending in which judiciary you live, you don't have to ever have told the other person that you were recording, as long you're present during the recording.
