Consistency is not the problem, it's just time. I need to cook food every now and then and actually take sit to eat 6-7 times a day which honestly is a pain in the ass because I have things to do you know. That is a problem with consistency. Sleep, diet, and exercise are the pillars and if you're slacking on one that's a problem of consistency. If you're not eating when you should that's the same as missing workouts, not growing, and thinking that you have an actual problem beyond just not going…

I cannot relate lol, my struggle has always been in the opposite direction since a few months after I started. If I slack on my diet that means I accidentally eat 5000 calories/day. Still, that's an obstacle to leanness and calories matter more. Can you really see a visual difference from 150g vs 250g of protein? I never could. Even eating 300+g per day I didn't notice any particular difference in my look or performance. Gaining 30 pounds you can do by adding 300-400 calories per day on average …

You're barely holding onto the muscle you have without "drinking proteins"?. Sounds like you're just struggling with day to day consistency like any other average amateur non-serious person and are definitely way above 8% bodyfat, unless that's according to your bathroom scale. Protein intake is the easiest damn thing and shouldn't/will almost never be a real limiter, let alone "the one". One scoop of whey is 20ish grams of protein, or like half a cup of cooked peeled shrimp, or a cup of cottage…
