My main motivation with taking responsibility away from the bar tender, is I'm an adult and don't want someone else telling me when "I'm finished." I know how I fell, I know if I'm "there yet." No worries dude, I do that shit constantly, especially on mobile. It's probably my #1 mistake, changing a word (or moving it somewhere else in the sentence), then not changing the prose on either side of the word. I don't ever do that on desktop though with a full keyboard, I think because if I change something, I just backspace to that point and rewrite the whole sentence, rather than only moving the cursor by tapping with my finger. It's also just harder to write with only your thumbs.
