Yeah, the more muscle mass you have, the more muscle mass you have on your face. A decently muscular build at 12% will look healthy with good facial structure. A skinny build at 12% will look malnourished. I would just cut to 15%, see what you look like there and decide whether to add some mass or keep cutting. Obviously it's going to take you a long time to cut ~10% bodyfat (probably close to a year) and you're going to lose muscle mass along the way.

It depends on your current stats. In essence, yes, you will look better at 12% compared to how you look now. From my own experience, my facial aesthetics drop rapidly the further I go above 15%. But it depends on how much muscle you have underneath that fat. If you've got little to no muscle mass, your face will just look gaunt and unhealthy. No, it wasn't always like this. Obesity has only really come about in the past 30 years and it's been increasing at an exponential rate. There's a lot of causes. Never tried ZMA, will look into that one. I just stick to Fish Oil and a Multivitamin. I tend to get a vitamin D deficiency in the winter months which can make me depressed. Multivitamins work wonders for keeping that at bay.

In a cut you want a caloric deficit, while maintaining high protein intake and high intensity training. You cut calories first from carbs, then from fats. You shouldn't ever need to cut calories from protein. Cut down to a healthy calorie deficit for your size, your total intake should really be no lower than about 1,500 - 2,000 cal. If you need to go lower, then you just up the cardio.

I've had some success getting the odd shots on my own. Basically I just head out with a camera (phone works too), tripod and a few t-shirts/shirts/sweaters. Pick a scenic location with good lighting and set the camera up on record. Walk around, strike a few poses. Rinse and repeat, changing location and clothes. Great quality post. As you say, pictures are the most important yet hardest bit to get right. Currently struggling with that one myself. Spent the past year killing it in the gym and built a good physique which will be great to showcase. But the downside of course, is that all of my previous travel/outdoor/group photos (where I was a skinny DYEL) are dead in the water.
