I'd suggest Montana. Cabins with 20+ acres are surprisingly cheap. There's fishable waters and hunting land all over. A greenhouse will take care of fruits and vegetables. Some properties have taped wells and/or springs for a steady water supply as well as solar panels and a battery bank for electricity. I found one with all of these for $149k accessable year round with a 4x4. Some require a snowmobile in winter though.
