I'm honestly suggesting that the English language is a very complex and somewhat contradictory system. And yes, one word can dramatically change the tone and meaning of a statement. Oversimplified example: "Fuck you" and "Love you". One word change, vastly different sentiment. The inclusion of "Sorry", if put in the proper context does not make you look like a bitch or desperate. Do keep in mind that people aren't at their most interesting and appealing right when you first meet them. People are typically more polite, proper, and less loose the first few times they talk to someone. I'd say you have to give it a few good conversations to really tell if someone is interesting to be around. If you are actually into this girl, saying "Hey I've been busy." Comes across as. "Yeah, I've been busy. Deal with it. You're not a priority for me." Which makes you look a bit of a dick. Saying "Sorry, I've been busy." Doesn't make you look pathetic, it just expresses regret that you have not been able to talk with her as much as you'd like. And if you HAVENT been talking to her as much as you'd like, then that's legit.

It works marvelously. And you can use it to make up for a shit-ton of other stuff that you happen not to have. It does, however, have to be the right KIND of humor. As a general rule of thumb, don't pull anything out at first that's too dirty/racist/mysogynistic/offensive. You have to try to be clever and witty without pushing the envelope too hard.
