You miss 100% of the shots you don’t take. It works if you have charisma and basic social calibration. Fortunately as a guy you can work to improve both of those things. It’s a skill. You are going to suck at it at first. Cold approach, other forms of meeting people, it’s all the same. You just don’t naturally vibe with most other people. Why would cold approach be any different?

You didn’t ask her when she was free to see you, you nailed in Friday and you don’t know if she is free Friday. Generally is better to propose a few days that work for you, like two maximum three. Then get a day nailed down. Once you have that, I like to ask dietary preferences (partly that’s where I am located), then pick a causal restaurant, then lock down the time. This makes it easy for her and you ah by boxed yourself in proposing something she can’t do.

You don’t do anything different. The thing with alcohol is it just lowers your inhibitions. Makes you less self conscious and more willing to be forward. So that’s why it feels easy. So without alcohol you just have to override your inhibitions. Your confidence plays a part on this. When you are confident in yourself and not seeking external validation (good inner game), you can escalate more easily sober. It’s a good skill to have, and once you have done it more it won’t feel like a big deal.

What you are asking for is better communication and for someone else to change their default behavior. Aka for whether you want but be prepared for nothing to change, or for it to change and then you see backsliding.

You can’t make a flake not flakey. You can tell her, but in my experience these types of behaviors don’t change. You either accept it or you move on.

Pros: being in a band and playing a guitar is considered cool (assuming you are decent and draw a crowd) and is a status thing. Also if you have other ladies/geoupies it can be a social proof thing. Cons: you have other things, like gear load in/out, merch, networking, fans wanting to talk to you, etc. So that means you have less attention to give her. Nothing going wrong just means it’s not a no. Date can still be ok and she can just be like, meh, nothing wrong per se. But that doesn’t mean you generated the strong attraction. You have to be her best option. It’s not that you did anything wrong, it’s just that your pull wasn’t strong enough to overcome everything else. This is going to happen though sometimes. All you can do is try to improve your in person charisma.

The rule is if the flake once, they have to have a real good reason AND make the effort to reschedule, ie suggest days and times. If they don’t do that, cut them off.
