Its a concern for me as well, but steak is usually cooked at around 130F, chicken in the 140s, and pork in the 160s, so it never gets close to boiling. For long cook times the wear on ziplock bags will be concerning which is why a foodsaver is better for those just for peace of mind, but for short periods it will be fine. Ziplock bags are good until around 180F and are BPA and dioxin free.

I guess that’s true, I’ve never used a meat thermometer and I don’t know why, but I love sous vide and think it’s the easiest method to get the best steak you can get with limited experience. Depends on what kind of pan you’re using and how thick and lean / fatty the steak is. Also the build quality. Imo the biggest difference between a certain Apple product and the rest of the competition I would say is the Macbooks. Metal build and hinges that just won’t quit really make a world of difference.
