One of the things I found improved my stir fries/fried rice actually came from the grandfather of an Italian friend of mine. Basically, he would add a generous helping of oil to the pan and put it on low heat, then add black pepper, salt (chicken powder if you prefer more flavour), crushed garlic and onion to the oil.
