I'm actually thinking of the reasons why the flavor wasn't popping more. So far the possible causes include - not enough salt, I added water in the middle and it should have been hot water, I didn't evaporate enough water at the end/didn't cook it long enough, should have dry roasted the powdered spices before using them.
