I think you're pretty screwed in terms of phone choice. You can still buy a phone from an Android OEM, remove as much of Google's ecosystem as possible and install 3rd party app stores (Amazon, F-Droid, etc.) If you buy an iPhone you're paying Apple probably close to 100% since they make the hardware, the OS, and they own the App Store.
