"Human" sounds like a noun to modern ears because its been substativized as one. But it comes from the Latin "humanus", which is also an adjective, and it used to exclusively be an adjective, which is why the phrase "human being" was necessary. Calling someone "a human" would have been like calling someone "a tall". A tall what?
