Many took on local cultures or hid their Jewish identity, washing away the cultural aspects of their ethnicity. The average NY Jewish man might not seem to have an "ethnic" nature, but amongst Orthadox groups, it's very palpable. Also, Wiki does list it as one of the "contemporary ethnic groups."
