I’ve noticed they’re dating more and more young attractive men Presumably it's similar to the opposite: Older guys dating younger women. If you are a successful older woman, odds are you are wealthy, interesting conversation partner, with an interesting social circle, interesting holidays, etc. This can be attractive to younger guys. Not merely for the wealth but also because typically successful people are interesting people with interesting lives (again, typically, not always.
