When confronted with such a situation I weigh the desire for the waitress versus the longevity of my visiting said pub. If its a pub I'm comfortable at, know everyone and they know me, and my ratio of free drinks to paid is acceptable, I don't want to risk that for some poontang.

Be in charge. Think of the conversation as a professional practice. When speaking with a teacher/professor/boss or on the phone, most guys use their big boy voice. Do the same thing but add some honey to let the words drip. When your the one asking the questions you steer the coversarion. Ask a lot of questions that the best answer to is "yes". Paternity test. Something similar happen to my bro and the chick and her family tried to rope him into being the dad.
