Does she suggest alternative times? The "I'm sick/headache" excuse is one of the go to lies they use. 90% of the time it is a lie. She MIGHT have some chronic illness or something but it is unlikely. In my experience if she flakes for any reason but offers an alternative time she is interested ie "I'm sorry Tuesday won't work, maybe Friday night?".
