Lots and lots of rejection will kill anxiety. One summer of door to door sales killed any and all of my approach anxiety. I think 1/20 people that answered the door didn’t yell at me or slam the door in my face. That one person that gives you the time of day is at least intrigued. Just be curious about them and learn playful banter. If they like you, you’ll close. If not, then there are plenty of doors that need knocking. So my advice: get a summer job selling solar panels. I would maximize nonverbal communication as much as possible. With OLD and social media, the dating world is more superficial. Good grooming, dressing well, and staying in decent shape goes a long way. It’s really the first thing they judge you on. Or do you mean caring about their looks?

Right, but it’s not easy, otherwise everyone would do it. If your goal is to understand it, then I would read up on social frames and power. If you want to fix it, then do a mix of self improvement, frame control, and practice. One last thing, how do you know that they aren’t just as nervous?

Girls (or attractive people in general) are the gatekeepers of sex. They hold most of the power in social frames. Either switch the frame or work on yourself to get more power. So the choice is to either care less and/or work on your insecurities to build your self confidence. There are tons of books on how to do both if you want a more in-depth explanation. I am no expert, but it has worked for me.
