Read this carefully: what AI does is process at past hirings (in this case, past 10 years of hiring) and then try to do the same, mimic those human choices. They fed the AI 10 YEARS of Amazon CVs, and told the AI which ones were hired. The AI learned from there. The women who built the AI or were in charge of the project did not tamper the data that it was fed, this was historical data. CVs are complex, they don't just say "2 Bachelor's + 1 Master's" and ta-da, you make a rule to maximize "qualified-ness" like in Excel. This means that the AI had to be trained by looking at choices made by humans first, processing that data, and then trying to replicate those choices on a new set of CVs.
