Based on my in-person experience (in contrast to online dating), calling it a "date" always puts the girl under pressure. The same. But one point I disagree with is the friendzone part. I believe it’s guys’ fault to fall there (by never showing romantic/sexual interest) and it’s really easy to get out. You just need to take the risk of ruining the relationship and start showing interest.

Totally agree & this is the right mindset to have: a girl will like me much more as she spends more time with me. This is exactly what I'd suggest actually. Mixing work with dating too much is rarely a good idea and you should definitely be very careful with your flirting/escalation, like not saying risky things during work. What I like about "can we continue this conversation later" (except for the number part) is that it's vague. If she likes it, she can pick the idea up, propose plans/alternatives and even ask for contact herself. When they meet, he can freely flirt and escalate.

So this is a tricky question. The most interesting topic for you can be the most boring for her, or vice versa. For me, fun doesn’t come from the topic, but the attitude. Every topic (except very charged ones) can be made fun or sexualized. I did, but it wasn't directly because of she wasn't suggesting a day or saying she cannot meet, I felt that she was bs'ing me (giving random excuses just to say no). Next time, can you just talk without having the feeling "I need to achieve this particular thing at the end (like getting a number)". It should be much less intimidating in some situations, like asking for/commenting on something at a fair/bar/activity. Then, you can just thank and leave.
