I always just followed this as a guideline: http://en.wikipedia.org/wiki/Sex_and_gender_distinction But I think how you explained it is better. My GF refers to herself as a transsexual even though she is non-op.

The word transsexual is not offensive. It generally means the person had sexual reassignment surgery. Usually, if the person identifies as a different gender than they were born with, they are transgender.
