Why wouldn't you just play out the second scenario to a more natural conclusion? Ask her for some actual help on some trivial thing and chat to her like she's a normal person? Then take it further if there's a connection? Why does it have to be all shock tactic and pick up lines? Women see right through this shit. If you're treating someone like they're some prize in a game, they'll know it.

Are you able to create reasons to interact with her more at work? If you can chat quickly but privately a couple of times I'd recommend asking her out then. Rarely a good idea to do in front of other people.

Learning sign language is hard and isn't really being true to yourself. I think online dating is honestly a great starting point. I wouldn't necessarily worry about mentioning it in your profile or anything but maybe after chatting to someone on the app for a while you would be comfortable bringing it up. Good luck. As a woman I can say that a lot of us don't really like being hit on in public out of the blue, but if you're able to strike up a conversation and make her laugh at least once before you get to the asking for her number, you might have a good shot.
