I think signs of interest are far more valuable in a dating or daygame setting. You were in a job interview, so her shifting could've just been out of boredom or general physical comfort. Maybe back and putting her arms up was a physical gesture to get into a flow of speaking after having sat quietly for a time. IMO, way too many factors to try and chalk it up to attraction.
