No that's completely fine. But you're not making any irrational assumptions in that scenario. Also, you're in no way saying blacks are inferior to any other ethnic group.

If you're just stating fact, or interpreting data, you're good. But my example, the speaker made an unjustified assumption - an assumption made with no evidence i may add - that a single individual was going to partake in drugs drugs or alcohol, JUST because he was black. Statistical observations != irrational assumptions

You're confusing observations with irrational assertions. "Black people are often poor tippers." if you're making this assertion off the back of some degree of credible evidence, it is absolutely not racist. "Black people are often poor tippers, they probably are saving their money on drugs or alcohol" this is racist and it also sort of implies blacks are inferior

Calling something racist or sexist does nothing to invalidate it. However, if an assertion is racist or sexist, it it obviously influenced by a lot of irrationality. (because, well, racism and sexism aren't rational) In your first example, the assertion being presented isn't racist or sexist. It's simply research being presented.
