"Black people are often poor tippers." if you're making this assertion off the back of some degree of credible evidence, it is absolutely not racist. However, if an assertion is racist or sexist, it it obviously influenced by a lot of irrationality. (because, well, racism and sexism aren't rational) In your first example, the assertion being presented isn't racist or sexist. It's simply research being presented. Thus, no one can invalidate what you said by simply saying it is sexist.
