By not focusing on it but only mentioning it in your message. It justs shows that you're not a doormat who accepted this like it was normal, and that you can express you opinion even she couldn't like it.

Maybe you could tell her in a cool, polite but firm way that you enjoyed the night (if you did) but not her distant attitude, that you still don't understand as she usually is adorable. No need to focus only on that point, but it's still important not to hide these feelings.

Not so original, but you could ask her what she's reading. The point is to "break the ice" and engage the conversation, she'll probably know why you're talking to her and will appreciate your initiative.
