I am man, RedPill oriented, my SO is a nurse with night shifts... seems close :) He is NOT being fair nor just, or you are not sharing the whole story/context with us. If you are, then just talk to him about it, and explain that you just disagree with what he said. My guess here is just he does not understand your position (probably he should), so honest talk should solve it. Just don't get emotional during the talk :)

If you want to document something, you have to choose where. If not mobile app, then its paper notebook. I did both, FitNotes is way more efficient, easier to manage and less time consuming. Try different options for yourself.
