Sometimes there is too much emphasis here on the right thing to say or having the right response to something. This is ultimately reactionary behavior. Sometimes, as it seems you have noticed, confidence, body language, and just being well-presented will get you MUCH further than that one witty line you should've said.

When your listening to someone talk, they're expending so much of their focus on talking that they really won't notice anything you're doing. As for the fidgeting, stay still but a relaxed still. You're getting nervous which is why you're doing those tics. You probably already know how to listen. Just apply what you do in relaxed situations to listening when you're nervous.
