Actually, there are situations in which a person can have only one x chromosome, xxy, and xxyyy, for example. There are other delineations, but those are the ones off the top of my head. So no, there are not even just two sexes and having an xy doesn't necessarily make you male and have xx doesn't necessarily make you female. (i.e. a true hermaphrodite)

To be fair, in gender studies, sex is the term used for referencing someone's physical appearance. Gender is a mental construct: it represents how you view yourself and how you feel. You can be male and feel female, thus your sex is male and your gender is female.
