It's OK and quite smart to remain undeclared the first year. Take a variety of classes and see if any interest you. You might be surprised. Not pursuing piano as a career does not mean you're giving it up. Most people pursue a more stabile, lucrative profession and happily keep their more artistic interests as satisfying hobbies. And, frankly, very few artists/musicians are able to make a lot of money when they choose that as their career.
