I don't understand why anyone would really care about a person's sexual past like that, man or woman, but I can see how it is a personality/lifestyle trait, so having it as a preference doesn't fall into the "prejudiced/bigoted" category and there's nothing really we can do about it.

Because I have never actually seen evidence for gay conversion therapy, whereas getting over racist sentiments happens literally every day. Because there is no evidence for people changing sexuality, while there is a litany of evidence of people learning to find different features attractive, and developing kinks and fetishes etc, all very quickly, as well as all the different beauty norms in different societies. That's why I said "to a degree". I didn't choose to be bisexual, but I did train myself to find certain features I didn't previously find attractive, attractive. I am not special. Sexual preferences and beauty norms differ across societies and cultures all over the world. These things aren't innate whatsoever, and people can actively train themselves in very short time-frames to become genuinely attracted to things.

It is 100% a socially constructed thing, that we do not see in all cultures, that not all women have even in cultures where it is the norm. It is, in some way, the modern equivalent of inter racial couples being seen as "weird" or "wrong" in the past, and it will probably go away in the near future. About 10% of couples should feature a woman taller than the man in the relationship, based on random pairing.
