Ok, so whatever people are doing isn't "incorrect" (unless you're a priggish prescriptivist) but the "of" doesn't add any meaning to the phrase which means the same thing and is equally clear without it, and it's obviously the result of a chain of linguistic errors: "would have" becomes "would've" mistakenly becomes "would of" which is then used as a model to hypercorrect "had" to "had of".
