There are 1000 things you can do with noodles. Just boil them and add shredded cheese and butter. It makes a solid mac and cheese that keeps easily. Big pot of mashed potatoes as a base for different dishes, like chili or ground beef. Stew is a good one too. It keeps for a week and ages well if refrigerated.

I 100% get your concerns and agree with them to a large degree, but ultimately i think you did the right thing. Being worried about your children's well being is completely natural, but you're forgetting that you're free to help your children as they grow up. You made it work and you can help them make it work, and being abnormal in ways will probably help them fit in if that makes sense
