First things first, talk to your wingman, if he wants to see the friend again then a double date isn't too bad. You will both need to be clear on how to isolate during the double date if either of you want to get some action (generally, because otherwise ASD kicks in). If she turns out to be a monster or a crazy, it's always good to have an escape plan. If you get coffee or a drink first, you can screen her for being up to your standards before getting tied to a table for an hour.
