The science here has to do with mirror neurons in the brain. When we see someone being passionate, our brains immediately identify, empathize, and mirror the emotion. This forms social bonds, which form communities, which increase the chances of finding suitable mates. For the purpose of seduction, this helps take a woman's (or mans) mind off of emotional insecurities and sexual agendas, easing them into a comfort zone where romance is not misconstrued as neediness.
