I agree, this is the reason why Catholicism functions so well. Do as you like, engage in sinful and hurtful behaviours as long as at the end of the day you confess to God and wash away your sins.

I actually understand where you are coming from, if you can afford to be a vegan go for it, I read that passage as more of a metaphor. In today's society we can live as vegans because we have the luxury to do so, however the main point I took was that if your morals are detrimental to your survival or your ability to thrive in whatever environment you face then they should be discarded.

"People want plausible deniability, not virtue. Give them what they want. You have a moral code? Good for you, a vegan in the Savannah will not live long, not without learning to hunt and eat." This is my favourite part , overbearing morals can be a huge obstacle to progression.
