Because as a server you are extremely expendable and replaceable. You get hired on at minimum wage and that's your rate always. The only benefit is tips, and the only reason anyone would ever want to wait on customers and be at their beck and call is because the customers are paying them tips. Servers are like contract middle men to get the customers what they want from the kitchen in a quick and timely manner

Hey I wait tables and I need to make tips for a living. In the states at least, tipping is literally the only benefit of my job. We don't get healthcare, benefits, retirement, or literally anything other than the gratuity of our guests. I have a son and a place to live for the two of us. I know right, I feel bad for the guy almost, not even mad at him, just mad at her.
