SLI is deprecated, it's all Nvlink now and I don't know what (probably broken) contraption AMD has now. I personally don't have experience with AMD CPUs (specs look like really great value for a fair price) but the last AMD GPU I had would frequently kick the bucket when it came to drivers (blue screens and reboot-worthy freezes). For video rendering a GTX 1080 would probably be fine. (Don't think there's any need to spend money on an RTX card because you don't need raytracing to edit video).
