Lentils, rice and other grains and beans would be better comparisons since they are the staple of a vegetarian, not vegetables. Vegetables also do not degrade nearly as quickly and are less extreme in what is needed to preserve them. They don't have the downsides that meat do. Much better source of protein. Meat should really only be once in a while and preferably hunted and cooked, the remainder dried or frozen. .
