My humble opinion: 1. If you have talked to him before and have at least a neutral vibe, just ask him casually if he wants to hang out. You only live once. 2. If you haven't talked to him before, why not try having a normal conversation first. Then, once you have at least a neutral vibe, go to point 1. If you don't have even a neutral vibe, I'd say it's probably a bit of a lost cause.

Late thirties here. While the herd of attractive women thins out, they are still out there. In my area/country there are many childless ladies in their thirties, but if you're just in it for the hook up, why are kids even a problem? Can't agree more. Being an interesting person beats trying to appear like one. Or so I heard from a friend who is. On the upside to the OP, in my limited experience, almost every topic becomes interesting when you get deep enough into it.

Don't overthink it would be mine. Enjoy the date, bring her home if she wants to. If you get to making out, just slowly escalate from there. Her priorities will change as she gets more turned on.
