It's not an accident. I'm from the last cohort to do the oldstyle exam only 'O' levels in the UK. After that, they were changed to the new GCSE system where the final grade is a combination of course work and exams. I just rewatched the documentary that I got that from and it depends on the type of lying that they're doing. The specific bit about Hazell is here. Basically, when they're doing impression management or trying to misdirect the interviewer, the liar adds lots of detail. But, when they're asked about specific details relating to the lie, where, as you say, they have a heavy cognitive load, you're right, they clam up.
