Cut off or severely limit contact and move on. She's already politely let you down easy by telling you she doesn't want you to have any unrealistic expectations. That means she's not interested. If she was, she wouldn't have to say that and would be going out of her way to spend time with you romantically, not as a friend and not long-distance. Cut your losses and move on to the next one.

Walk up to her and say, "Hi, I'm CJ!" or whatever your name is, and go from there. It's really that simple. Let the conversation flow from there, keep strong eye contact, and escalate as you can (get her number, hug, shake hands, whatever).

I think lust is like anything else, almost anything can be addicting. I've gone through stages in my life where I am addicted to porn, then to video games, to reading and study, to fitness, to lifting, to sex, to TV, alcohol... you name it, I have probably had an addiction (or you could call it an obsession) at one point or another. Eventually those urges subside as you get burnt out on them, but being a master of those urges would be godly.

It doesn't have to be a museum per se, you can substitute any activity in his scenarios. His advice is pretty solid. If you're not at a stage where you have time, interest in new activities, or good logistics (your own place to bring a girl back to), you may want to consider working on these things before you start trying to game girls. I guess my question is, how are you going about not texting? For example, do you say weird things like, "I don't text" or "Texting is stupid, just call me" or do you simply just not text them back when they message you? It's ok to reply occasionally if it makes sense to, you just don't want to spend hours constantly messaging back and forth before or after a date...

You said it yourself, you're literally surrounded by hot women all day, every day. Take a chance! Take lots of them! You're going to fail, undoubtedly, even the Brad Pitts or Chris Hemsworth's of our world fail with hot women, it's not something to be scared of. Women react this way because they're trying to weed out the losers, or because they're nervous. Think about it - if you were a hot girl who got approached by guys (and creeps) all day, wouldn't you build up some kind of screening process…

Except for the last point, all of those sound like conversations I've had with women in the past on a 2nd or 3rd date. I'm sure I've been guilty of these as well, but damn they are just depressing things to talk about and usually make me think twice about continuing the relationship. They're almost like "Can you handle my level of crazy?" shit tests. No thanks.
